So what should I go for? My team (and movesets etc) are here (http://www.serebiiforums.com/showthread.php?t=105812), albeit with a Blissey added to the ranks.
I really need a Pokemon that can take physical hits, and was considering Donphan. What do you think?

Skarmory is the best physical wall imo.

Weezing has some nice defense, and can avoid the EQers, and it can be either special or physical, though I like the STABed Sludge Bomb, and Explosion is nice on the way out. Plus, the Haze is a cool bonus.

How about Milotic and Snorlax?
They both have excellent defenses and high HP!
If you want Milotic then here it is:
Ev's 242 Defense,200 Sp.Attack,42 HP,10 Speed,16 Sp.Defense
Hypnosis/Mirror Coat/Confuse Ray
Confuse Ray/Ice Beam
If you want Snorlax then here it is:
Ev's 242 Sp.Defense,16 Defense,200 HP,52 Attack
Note:If you don't like the Ev Placement then you change them to your liking.
Body Slam is there if you want to cause Paralysis,just so you know.
Other Snorlax Options:
Ev's 252 Sp.Defense/HP,6 Defense or Attack
Ev's 252 Attack/Sp.Defense,6 HP
Then there is Cradily:
Ev's 200 Defense/Sp.Defense,110 HP
or: 252 HP/Sp.Defense,6 Defense
Note:Again,if you don't like the Ev placement then change them to your liking.
Sludge Bomb/Rock Slide
Cradily can work,but I think other people here can make Cradily a better Pokemon.

Shuckle is the pokemon with very high defense, Steelix too.

Steelix is the best choice but watch out for all the fire/water attacks.

If Regice goes under "Special," so does Articuno.
