Let's stop there for a second. If this is true, then 10*.999 should equal the other side. Let's see.

Correct. Then the next step says to subtract .999... from each side. Let's do that.
9 = 9
1 = 1

in math, i am sure mathematicians read the "=" as "equals", it is an equal sign after all

yeah, reading word problem "is" means the same thing as "="
and in computer science, "=" means "assign" or "becomes"
and only "==" means equals...
