My problem with Metang (I was going to train one, but there was a problem) was waiting until getting access to Giant Chasm (I'm not able to trade) and I like getting a full team before getting 5-6 badges.
Note: In my White playthrough, excluding Braviary and Hydreigon (post-game), I got a full team when I got access to Dragonspiral Tower (after the 7th badge)

Unfortunately yes. They were too lazy to move the Day Care Center to somewhere that you can access before post game. Which is a shame, because off the top of my head, Sangi Ranch would've been a great place for it.
Oh God, I remember looking for Chimecho for hours, that thing was definitely one of the rarest in Pokemon history.
And that's another thing, most of my team members are late game. I can't get Gligar until before the 7th gym, Mienfoo until the 8th (I want a Hidden Hollow Mienfoo), Metang until Giant Chasm, and Zweilous until Victory Road. I'm stuck with Serperior and Arcanine (actually Growlithe since I'm probably going to wait to evolve it) for most of the game, and my team isn't going to be complete until the ****ing Pokemon League. This is another reason why I'm pissed that the Day Care is post game, I could get around that by breeding. There's way too many Pokemon clustered at the end of the game.
Don't even get me started on the honey trees. Those things were so hard to use I didn't even bother with them and just got all of the Pokemon off the GTS.

Not that simple for me. I want them to have my OT, but I also want to make sure it has halfway decent IVs and stuff, so in order for it to work I'd need to trade upwards of 100 or so eggs over, and that'd be extremely time consuming. Also, Beldum and Deino/Zweilous are tough Pokemon to raise from Lv. 1. I might do that for Gligar, though.

It's not as much the Pokedex itself that bothers me, though, it's the Pokemon distribution. There's a lot of Pokemon clustered at the end of the game (although to be fair, the last two gyms cover an absolutely massive area, but I think maybe they should've considered moving another gym to East Unova) and quite a few that are post game (which pretty much defeats the purpose of having them in the regional dex). With Shaking Spots and Double Grass theoretically doubling or sometimes even tripling the amount of Pokemon we can find in each area, there's just no excuse for that.

I don't think they wanted Shaking Grass & Double Grass to just overcrowd the routes with Pokemon. Some of them get crowded as-is.
Doubles was more to give increased levels for training
Shaking was to hide away Audinos and evolved Pokemon if you're lucky.
They're there and were likely designed for those purposes, not shoving in as many pokemon as they could. Otherwise we'd probably have, like, a 400 long Pokedex.
Putting Unova dex mons in the post game mystifies me, though, yes. Especially ones like Yanam or Lickitung who were specifically moved from their positions in BW1 that are available pre-game in BW2; so that was a specific design decision. Do they even show up on trainers before then?

I was lucky to find Chimecho after 2-5 wild encounters despite the low encounter rate.
I think there's really no excuse. The Daycare happened to be on Route 3, which happened to be a post-game area.
Trainers that have Yanma and Lickitung are post-game trainers.
