What eeveeloution should I get?

When all my guys are fully evolved my team would be:

Infernape
Garchomp
Staraptor
Lucario
Bibarel (HM slave)
?

I was thinking of Espeon and Jolteon but can't really pick which one, Vaporeon also popped into my mind for a water type

You have two Pokémon that are weak to ground on your team already and nothing that would have a super-effective move against them, so might I suggest Vaporeon, Leafeon or Glaceon? Leafeon would cover the fact that you currently have no counter for Water types, and Glaceon would similarly cover your lack of counter for Flying-types (which is worth considering, as both are extremely common types in-game).

So, I would suggest either Leafeon or Glaceon, though Vaporeon remains an option.

I'd go with Leafeon. You're going to have some problems with Bertha of the Elite Four otherwise (she's a ground-type specialist, and she has a Quagsire that is only weak to grass-type moves).

Bertha is weak to water for the most part, plus flint and also, there will not be anyone that resists water besides a few of cynthia's pokemon.
