My team as all Pokemon types. Therefore all weaknesses of any type you face. It takes a while and a lot of patients to get this team going since all Pokemon are in different areas and same late in the game.

Jolteon can use Shadow Ball / Charge Beam / Thunderbolt / Substitute.

Empoleon can use Surf / Ice Beam / Grass Knot / Flash Cannon.

My Jolteon had Thunderbolt, Shadow Ball, Signal Beam, and Thunder Wave in SS and it's a great moveset. It covers water, flying, ghost, psychic, and dark. That covers a nice chunk of the types.

Empoleon is good with Ice Beam, Grass Knot, Surf, and Flash Cannon. With that moveset you can cover a lot of different types.

I'd try to go for Roserade instead of Roselia, Roserade is a powerful grass Pokemon. Give it Sludge Bomb instead of Poison Sting, keep Energy Ball, replace cut with Giga Drain to get health back, and give it either Toxic or substitue and use Giga Drain to regain health after Substitute.
