I'm not a fan of u-turn in game or roost. I like quick attack and steel wing if you can get it.

So are you using the HMs on your team because you need someone to use them and dont want an HM mule? Most of the time a team of 5 and an HM mule is better in game than a team of 6, except when you're doing a specific thing obviously, like fighting the E4, red, etc. In which case I grab one of the other pokes i've trained and swap him in for the HM mule
