Arcanine wants Wild Charge > Thunder Fang. You're not going to be using your Electric-type attack much, so when you do use it you want it to do considerable damage. Again, the recoil isn't a problem because you won't be using it that much.

Dragon tail is to force a switch while outrage has higher damage output. Aqua tail is for taking down fire and steel types. Serperior doesn't learn Earthquake.

-Extremespeed

Overheat has more power while Flare blitz deals more damage if you go with Jolly or Adamant nature. Wild charge is better then Thunder fang due to a higher damage output.

Vaporeon(Ability Water absorb)

-Heal bell/Shadow ball

Heal bell cures your entire team of status when used in battle while shadow ball is a special attack which is what Vaporeon is best at using. HEal bell requires shards and the move tutor.

Jolteon(Ability Volt absorb

-Signal beam/Volt Switch
-Shadow ball

Thunder wave provides support while the others supply better damage and coverage.

Fire punch is for steel types that Levitate although you probably won't see any so U-turn is a good option. Dragon claw is for stab.

Standered sets the last move decides on how it plays. Trick room beats faster pokemon Recover stalls out opponents and calm mind boost and sweeps teams.

The abilities reccommended arte the best for ingame and online(with the exception of Vaporeon but Hydration needs rain support.
