Espeon can handle Marshall (just beware of Payback), Umbreon can take care of Caitlin, and Lucario can beat Iris and Grimsley.
    Shadow Ball > Quick Attack

    Espeon-Mild w/ Twisted Spoon
    Calm Mind
    Psychic
    Shadow Ball
    Signal Beam188 sp atk, 173 spe @lvl57

Future Sight is a risky move, and why use Morning Sun when you can just use a Full Restore? Calm Mind for boosting, Shadow Ball + Signal Beam for coverage.

    Cofagrigus-Naive w/ Spell Tag
    Calm Mind
    Shadow Ball
    Substitute / Protect
    Toxic
    157/189/124 defenses with 137 sp atk @lvl57

Curse isn't that great a move since you have to cut your own HP. Go with Calm Mind instead for boosting. Toxic > WoW since Cofagrigus already has immense physical bulk so the attack drop from burn doesn't help him. Substitute or Protect to either help setting up or stall. If you happen to have Hidden Power [Fighting], though, use that > Toxic for perfect unresisted coverage.

    Umbreon-Careful w/ Rocky Helmet
    Curse
    Toxic
    Payback
    Return
    186/145/195 defenses @lvl58

Again, no point in wasting a moveslot on a healing move (Moonlight) when you can just use Full Restores. Umbreon's SpA stat isn't that great, so go with Return > Psychic for your coverage move. Curse to boost your defence, and it pairs very well with Payback.

    Lucario-Hardy w/ Metronome
    Sword Dance
    Ice Punch
    Close Combat
    Shadow Claw174 att, 156 sp atk, 148 spe @lvl58

Fighting and Ground get similar coverage, so replace Bone Rush with Shadow Claw for better coverage.

    Serperior- Timid W/ Miracle Seed
    Coil
    Leaf Blade
    Aqua Tail / Return
    Outrage / Dragon Tail

Coil for boosting, Leaf Blade for STAB. If you have BW2, you can go with Aqua Tail and Outrage for good coverage; otherwise, you'll have to use Return and Dragon Tail.

Alternatively you can use a special sweeping set:

    Serperior
    ~ Calm Mind
    ~ Giga Drain
    ~ Leech Seed
    ~ Dragon Pulse

Calm Mind for boosting, Giga Drain for STAB and Leech Seed helps with healing. Dragon Pulse for coverage. As with a lot of grass types, you could also go with Substitute > Calm Mind if you want a sub-seeding set.

    Salamance/Hydreigon
I don't think using Hydreigon would be a great idea, since it will likely only be a Zweilous when you battle the Elite 4.

If you go with Salamence, you can use the following moveset:

    Salamence
    ~ Dragon Claw
    ~ Flamethrower
    ~ Earthquake
    ~ Fly

Dragon Claw for a reliable STAB move, and Dragon + Fire gets almost unresisted coverage. Earthquake for further coverage and Fly for Marshall.

If you do end up deciding to go with Hydreigon:

    Hydreigon
    ~ Crunch
    ~ Dragon Pulse
    ~ Flamethrower
    ~ Surf

Crunch > Dark Pulse as your Dark-type STAB as most Pokemon weak to Dark have a lower defence stat. Dragon Pulse for STAB, Flamethrower and Surf for coverage.
Comments in bold. Hope this helps.

Sorry I couldn't finish my rate. I had to go take care of some personal matters.

Calm Mind is post-game, at Striaton City's PokeMart.
